Gruyere Swiss cheese is made of rich milk from cows grazing in the Alps mountains. The cheese has a sweet but slightly salty flavor that evolves when aging (from 5 to 10 months) from creamy and nutty when young, to assertive, earthy, and complex as it matures.
Gruyere is named after a Swiss village. The natural, rusty brown rind is hard, dry and pitted with tiny holes. Slightly grainy, the cheese has a wonderful complexity of flavors – at first fruity, later becomes more earthy and nutty.
